Mexican Lasagna

 1 tbsp olive oil
 2 large garlic cloves
 1 lb lean ground beef
 2 tbsp taco seasoning
 1 small yellow onion
 2 10oz cans rotel
 15 oz can southwest corn
 12 8in. flour tortillas
 15 oz can black beans
 16 oz can refried beans
 3 cups shredded cheese
Cook Filling

Heat olive oil to a large skillet and cook ground beef until almost all browned.

Add onion and cook until the beef is completely browned.

Add garlic and cook for 30-60 seconds, or until fragrant.

Stir in taco seasoning until well combined.

Add Rotel tomatoes, corn, and black beans and stir until well combined.

Bring the mixture to a simmer and cook for 10-15 minutes or until all the flavors are combined.

Assembly

Layer tortillas on the bottom of the baking dish, overlapping slightly and cutting to fit if necessary.

Spread a layer of refried beans on top of the tortillas.

Add ¼ of the cheese over the beans.

Next, top with ⅓ of the meat mixture.

Repeat the layers, ending with a layer of tortillas.

Top with the remaining cheese.

Move the oven rack to the middle position and preheat the oven to 375 degrees F.

Spray a 13×9 inch baking dish with nonstick cooking spray.

Bake for 15-20 minutes or until the cheese is melted and bubbly.
