Banana Bread – Sheila

Category
 2 to 3 medium (7" to 7-7/8" long) very ripe bananas, peeled (about 1 1/4 to 1 1/2 cups mashed)
 ½ tsp butter, melted
 ½ tsp Baking Soda
 1 Pinch of Salt - (1/8 teaspoon)
 ¾ cup Sugar
 1 Large Egg, beaten
 1 tsp Vanilla Extract
 1 ½ cups All Purpose Flour

1) Preheat oven to 350 degrees F
2) Mash the bananas in a mixing bowl and add the butter. Stir the melted butter into the mashed bananas
3) Mix in the Baking Soda and Salt.
4) Add the Sugar, Beaten Egg, and Vanilla Extract
5) Mix in the Flour
6) Pour batter into a greased (buttered) Loaf Pan
7) Bake for 55 to 65 minutes at 350 degrees or until toothpick comes out clean
NOTE: If the outside of the loaf is browned but the center is still wet, loosely tent the loaf with foil and continue baking until the loaf is fully baked.
8) Cool and Serve

OPTION: Add Chopped Nuts to Batter Mixture

Storage: Can be frozen
