Angel Hair Past with Plum Tomatoes and Fresh Basil – Large portion with chicken

Ingredients
 16 oz Angel Hair Pasta
 1 lb cubed browed & cooked chicken with salt and pepper to taste
 1 tbsp Extra Virgin Olive Oil
 6 Garlic Clove, crushed
 2 cans 28 oz peeled tomatoes (drained with lid)
 1 ½ cups Minced Fresh Basil
 1 ½ tsp Salt
 Freshly Ground Pepper, to taste
 2 tbsp Balsamic Vinegar
 1.50 oz Parmesan Cheese, shaved

Cook the pasta according to package directions. Drain, set aside and keep warm.

In a large nonstick skillet, heat the oil. Add the garlic and saute until fragrant, about 30 seconds.

Add the tomatoes and cook, stirring as needed, until softened, about 5 minutes.

Stir in the basil, salt, and pepper; cook until the tomatoes are very soft, about 5 minutes.

Pour chicken and tomatoes over the pasta; toss with the vinegar. Serve, topped with the Parmesan
