Anise Cookies

Cookie Dough
 6 cups sifted flower
 6 tsp baking powder
 6 eggs
 1 ¼ cups sugar
 1 cup extra virgin olive oil
 6 tsp vanilla extract
 6 tsp anise extract
 2 tsp anise seeds
 2 oz Seagrams 7 whisky
 2 oz Anisette liquor
Glaze (Optional)
 1 cup powdered sugar
  oz anise extract
 56 tsp whole milk or water

Preheat the oven to 350ºF/180ºC and line a two of baking sheets with non stick parchment paper

In a bowl whisk (or sieve) all purpose flour & baking powder

Beat eggs - add sugar, vanilla, anise extract, anise seeds, oil, Seagrams 7 & Anisette

Add 1 cup flour & baking powder 1 cup at a time - mix well after each addition.

Form in 2 logs on each cookie sheet (greased & flowered) - Makes 4 logs or 72 cookies

Bake for 20 to 25 minutes

Remove from oven and brush with beaten egg & place in broiler to brown top (watch carefully)

Slice logs while still warm

Sieve the powdered sugar to ensure there are no lumps and so that your icing will be smooth.

Mix in the remaining ingredients in a small bowl until smooth. You may not need all the milk so just add 4 teaspoons to start and then add more as you need. The glaze should be thick but not too thick that it doesn't drip a little.

Dip the tops of the cookies into the glaze and place upright on a wire rack. Sprinkle immediately with rainbow sprinkles. Allow to set.
