Dough
4 cups flour
3 eggs
¾ cup warm water (110-115 degrees)
1 tbsp shortening
1 tsp salt
Cheese
1 lb ricotta cheese
1 egg
1 tbsp finely chopped fresh parsley
2 tsp salt
¼ tsp pepper
2 tbsp grated romano cheese

Mix dough ingredients. Add water as needed. Texture should be slightly tacky.
Let sit covered for 30 minutes

Mix cheese ingredients together. Add more salt and pepper to taste. Make it a little more salty tasting than preferred as it will cook out when raviolis are cooked.
